Brazil Fazenda Pantano Single Estate Coffee Beans
Fazenda Pantano is situated close to the city of Patos de Minas and covers 550 Hectares at 1150 MASL. Of this land over 300 hectares have been allocated as permanent forest reserves which is over 6 times the legal requirement.
Over 200 varietals are grown here, most of which are in experimental production, looking at process and flavour and working closely with the Brazilian Coffee Research Institute.
This particular lot is a pulped-natural yellow bourbon, known for its sweetness and milk chocolate body. The large red cherries are picked and separated in the post harvest process. The skin of the cherry is removed and most of the mucilage as well. The resulting sticky beans are then laid out to dry on African style raised beds, where they are frequently turned over to allow even drying for 10 - 14 days.
The farm is certified by the Rain Forest Alliance and supports a local school as well as funding various training schemes and courses for its staff alongside full health care.
